Choux Paste (Cream Puff & Eclair)







































Ingredients

Milk 115g
Butter 85g
Salt 2g
Water 125g
All Purpose Flour 130g
Egg 180g


Method~


1.Boil milk,butter,salt and water.
2.After boiling, add in flour and stir until even.
3.Take out and put inside mixing bowl, mix on 2nd speed.
4.After mix until warm then only add in egg slowly.
5.Pipe the choux paste. Steam Bake 180c 25 mins.

Pastry Cream~

Instant Custard Powder 90g
Milk 300g
Fresh Cream 200g

Method~

1.Stir custard powder and milk with the spoon.
2.Whip the fresh cream, then mix the custard together.
